According to Dr Charles Spence, an Oxford University professor who is championing a new science called gastrophysics, all manner of multi-sensory influences come into play when we eat — to such an extent that the food actually tastes different. For example, in one of the largest-ever wine tastings (involving 3,000 people), participants were given a glass of white wine and asked to say what it tasted like and how much they enjoyed it. Afterwards, the lighting and music were changed and... ‘The same food and drink in different circumstances tastes completely different,’ says Dr Spence. ‘Sometimes, things we are not conscious of have more impact than the things we are conscious of. ’. Dr Spence also thinks menus should be heavier, as weighty menus signal quality, but he approves of the elegant typeface and the short descriptions of each dish, with enticing key words such as ‘crisp’ and ‘succulent’. I get my food order in first because I know how the professor feels about this. ‘You are ordering what you really want instinctively, which means you will enjoy it more. In an experiment in Edinburgh, 50 people were given ‘canteen cutlery’ to eat a salmon dish with, while another 50 ate with heavier, fine dining-style knives and forks. When asked what they would expect to pay for the meal in a restaurant, those using the heavier cutlery said they would be happy to pay considerably more than those who had eaten with lighter, cheaper cutlery. This, Dr Spence believes, is because the brain associates weight with value. ‘Heston Blumenthal’s Fat Duck restaurant has the heaviest cutlery I know,’ he says — it is one of the most expensive restaurants in the world. Dr Spence also offers dieting tips: eat from a red plate to lose weight. ‘Red is a primitive danger signal, but it also gives the food less contrast which makes is less desirable, so you will eat less of it. ’ And he advises you to turn off the TV if you’re counting.
