Spaghetti Squash Lasagna
This is a simple, though messy, recipe. I'll include the one I made but you can basically change it up a bunch of different ways. 1 spaghetti squash - poke a few holes in it bake in oven at 375° for about an hour tomato sauce - mix 1-2 cups crushed tomatoes with some sauteed garlic and onions. Add basil, oregano, parsley, salt, pepper to taste. Simmer about 20 minutes. Add some brown sugar if it's too acidic. Once the squash is out of the oven, cut in half and let cool. Remove seeds and scrape the squash out of the skin with a fork into a large bowl. Mix squash + tomato sauce + 1/4 cup parmesan cheese & pour into lasagna pan. Top with breadcrumbs, more parmesan and a few tablespoons of grated cheese. Bake in 375° oven for 30-ish minutes. Broil for last five minutes to get top browned. Makes six-ish servings.
