There was a time in my life when I hadn’t eaten Mexican Street Corn. It was a sad time. That time was missing flavor, and creaminess, and kick. Thankfully all of that changed when I tried street corn for the first time at Taco Boy. It was love at first bite. The spicy, cheesy topping is perfect for sweet corn – add in the avocado for extra creaminess and it’s pure deliciousness. And I mixed up regular red onions for pickled red onions, because honestly – I just love pickled red onions and I will add them to anything that makes sense. Traditional street corn is grilled on the cob and topped with the cheese mixture. While I love that version, I wanted to recreate it as a salad because 1 – we don’t have a grill and 2 – I wanted to make something that was slightly less messy to eat. This version is awesome as a side dish for dinner (I recommend Budget Byte’s Oven Baked Fajitas ) or you could add chicken breast and make it a full meal. 3 ears of fresh corn kernels 1 tablespoon of vegetable oil 1 small avocado, cubed 1/3 cup cilantro, chopped 1/4 cup pickled red onions, chopped (I followed this quick red onion recipe ) 1 jalapeno, chopped 1 clove of garlic, minced 3 ounces of... Yep, I changed my blog name. Welcome to Carly Blogs. A little background — soak and simmer was a name that never really had much meaning. At the time I chose it, I thought it was cute and fun. I could never tell if it evoked a food blog, lifestyle, or just random ramblings. A name should be more important than that. I knew that regardless of how I wanted to grow or adapt the blog that it just wouldn’t work with that name. And honestly, I still am not certain what direction this blog might take. Sometimes I want to take it more seriously and write more useful posts and sometimes I just want to write about my weekend. And who knows what will happen when Adam and I have children: a family blog. So I knew I wanted to pick a more general name. I had a list of keywords that I liked, but I kept coming back to just using my name. It’s simple, it doesn’t pigeon-hole me into anything, and it at least somewhat represents me better than soak and simmer. it is my name after all. Like most things, this blog will be constantly evolving. I like to play around and try new things, so it’s unlikely anything will become stale. Do you like your blog name. Have you ever thought about changing it. I love being in the kitchen. And I love kitchen tools. I’m not too into the quick-gimmick As Seen On TV -type tools, but instead the standard, classic tools that will last decades. I like multi-purpose kitchen tools that are made with quality materials. If I’m buying something, it better last a long time. Below is a compilation of some of my favorite kitchen tools. I’ve been using each of these for a long enough time that I feel like I can vouch for their performance and durability. Here are my top-notch, favorite-in-the-kitchen, cooking tools:. 1 // Cast Iron Skillet – Numero uno is my cast iron skillet. I use it to roast a chicken, roast vegetables (lots of roasting), fry bacon, make frittata, bake cornbread, etc. I love that it’s the type of purchase that will last forever, too. Cast irons are great and retaining and distributing heat, so they’re perfect for meats that need to be cooked evenly. Cast irons can take a serious beating and they will last generations as long as you re-season them often. I actually have a 10-inch and 12-inch Lodge cast iron skillet. 2 // Salt and Pepper Grinders – Suprise, surprise, this is actually Adam’s favorite on the list. Before we had the salt and pepper grinders he thought they were ridiculously expensive and stupid. I think it’s really just because they look attractive enough that we keep them out on the counter and he doesn’t have to open and close cabinets to season his food. 3 // Cutting Board – My big butcher block cutting board is one of my favorite things in our kitchen. It’s pretty enough to keep out on the counter at all times and is great for cutting anything my heart desires.
